mediawiki.ui: Explicitly define input text color

This fixes an issue where certain system themes (i.e. custom Gnome
themes) would set a default & often unreadable text color for any
.mw-ui-input's. The text color is now explicity set to
`@colorGray1`, fixing this issue.
